Type: DRY RED
Vines: 100% CABERNET SAUVIGNON

 

Production Characteristics

Area: Parco della Vite e del Vino in the Colli Orientali del Friuli in Torreano di Cividale, outlaying division of Togliano, vineyard: “San Mauro” and in Cividale, vineyard: “Gondolo”.
Land type:
gravelly, calcareous.
Cultivation method: Rammed cord.
Grape harvest: harvested by hand in the second/third week of October.
Vinification: The pressed and destemmed grapes are put in the maceration tanks to undergo alcoholic fermentation (24-27 °C). This continues for about 12-15 days and consists of an alternation of repassing, pressing and delestage. The wine is then drawn off and put in stainless steel tanks at a controlled temperature (17-19 °C) where malolactic fermentation takes place. It is then left to ripen in oak barrels for about eight months.
Refinement: In the bottle for two months

 

 

 

Wine Characteristics

A harmonic wine with a bouquet containing notes ranging from little fruits to cinnamon to cloves.
It has a ruby red colour with violet reflections. It is delicately elegant on the palate, well-structured and intense with evident yet not intrusive tannins.

 

Food Matching

It is excellent with meat, game and cold meats. It is also ideal with well-aged cheese.
Serving Temperature: 18°C.
