Type: DRY RED
Vines: 100% PIGNOLO

Area: Parco della Vite e del Vino, in the Colli Orientali del Friuli in Colloredo di Soffumbergo, vineyards: “Sotto Casa” and "Cacciatore".
Land type: marly-arenaceous rock of Eocene origin, rich in calcium and potassium, containing moderate levels of phosphorus, magnesium and many other microelements.
Cultivation method: Guyot.
Grape harvest: rigorously harvested by hand, in cases, in the first/second week of October.
Vinification: Vinification:
The grapes, crushed and destemmed, are left to obtain alcoholic fermentation (24 – 27°) into maceration vats, and subsequently macerate for about 12 – 15 days. During those days, pumpover, pigeage and delestage phases are rotated. The wine is then drawn off the lees and aged for about 36 months in small French oak barrels.
Refinement: The wine is aged for six months in bottle.

Ancient grape variety native of Friuli, already known and cultivated before 1600 by Benedictine monks, it has a great and intense character. The colour is bright ruby red, garnet-red when aged; the nose is complex, with berries, plums, violet and blackberry scents, with a light spicy note. After its oak-ageing, it acquires a thousand hints, like cocoa, coffee, tanned leather and vanilla. The palate is rounded and full-bodied, mouthfilling and tannin-rich.

It is a perfect matching for char-grilled meats, game, matured cheeses and charcuterie, and as a meditation wine.
